While this fried Hokkien noodle stall at the basement of Golden Mile Food Centre had a very generic English name called Fried Hokkien Prawn Mee, its Chinese name had an additional "Hainan" in front of it, making it read Hainan Hokkien Fried Prawn Mee.

This Hainanese certainly got some confidence to put his dialect in front of the name of a dish which is representative of another dialect as their stall's name.

This fried Hokkien noodle stall which I am featuring today is very popular. You may not see a physical queue but there are always a few people standing in front of the stall at any one time waiting for their orders to be ready.

After ordering, you just have to wait patiently at one side for the staff to call out to you. I stood there for about twenty minutes before I receive my plate.

I ordered a plate of fried Hokkien noodle for $4. It seems like they only have one price option available but the portion size is too small for me.

The fried Hokkien noodle here uses yellow noodle with thin bee hoon (rice vermicelli). Ingredients included prawns, squid, egg and taugey (bean sprouts).

Over here, the uncle fries his Hokkien noodle in one big batch. Towards the end of the cooking process, he will cover the wok with a wooden lid and let the noodles simmer in the broth until all have been fully soaked up, resulting in a smoky and flavorful noodle dish.

The noodles will then be dished onto individual plates and served with both sambal and cut chili with a lime on the side.

Although dry, the noodles are still moist with the aroma of eggs and garlic. Surprisingly, the noodles were not mushy despite the long simmering time.

This dry version is definitely worth a try but I still prefer some sauce with umami goodness in my Hokkien noodle.
